Loved the rice..Thanks for the recipe. With so many people trying to track it down I was sure it would eventually surface.
I made the Spanish rice.. 3 times, and used two and a half large bags of rice. I couldn't get the propane adjusted in the rig, and kept winding up with salsa flavored wall paper paste. Man that stuff is sticky when it turns to glue. GLAD you were there. What's a taco party without rice !!
If there is a meet up next year ( and if I can beat the crowd and get a camping space) I get dibs on making taquitos and jalapeno poppers!! I will even put on a bunny tail and pass them out... just to get out of making rice again...

THE BUTTER IS IN BUTTERING THE CASSEROLE DISH... I use a very generous portion of butter in the pan. that is how the rice 'crisps' up on the sides and the bottom. and also the reason for the higher temp for the first 15-20 minutes and then reduce... for those crispy brown edges...
Did I miss the CEVICHE recipe? I need that for sure... i actually think someone at my neighbors camp made it. hahaha what a drunken weekend, can't put a face to the ceviche...
Ahh. Cowgirl Lanie... Can you give us the ceviche recipe? It was terrific! I took a little for the next day too!
