    Ok...
    Thought this would be a good thread for those who love to cook.
    Many Country singers have favorite recipes and what a better place to share them.Post your recipes. It will be a long summer with lots a family and friends around....
    Johnny Cash’s Old Iron Pot Family-Style Chili

    Johnny Cash’s sister Joanne presents his family-style chili recipe.


    Ingredients
    • 5 pounds sirloin steak, chopped
    • Shortening
    • 3 pkgs. chili seasoning mix
    • 3–4 15-oz. cans red kidney beans
    • 3–4 16-oz. cans whole tomatoes
    • All
    • seasoning to taste
    • Cumin
    • Thyme
    • Sage leaves
    • Garlic powder
    • Onion powder
    • Salt to taste
    • Chopped onions
    • Chili peppers
    • 2 tbsp. sugar
    • Chili powder
    • Chili con carne seasoning
    • 1 can tomato paste
    Preparation
    1. Brown the meat with a little shortening until medium. Add chili seasoning and cook 5 minutes. Add beans, tomatoes, spices to taste, onions, chili peppers to taste, sugar, chili powder and/or chili con carne seasoning to taste. (If chili is too hot, add 1 to 2 cans tomatoes.) Add tomato paste.
    2. If chili seems too thick, add water. Simmer on low for 20 minutes.
    Serves 12

    Sorry to go off topic...this is from the KING of rock n roll and his "Fit for a King" The Elvis Presley Cookbook:

    1/4 cup creamy peanut butter
    2 very ripe bananas
    10 slices buttered bread
    Butter

    Blend the peanut butter with the banana until creamy. Spread the mixture over 5 slices of the bread. Top with the remaining bread.

    In a skillet melt enough butter to coat the bottom of the pan. Place the sandwiches in the butter and grill them until the bread is lightly toasted. Flip to grill the other side. Drain on Paper towels. Makes 5 sandwiches. One serving.

    Award-winning Country music singer LeAnn Rimes shares her recipes for Cabo Chicken and Sangria.
    Cabo Chicken -- serves 8
    2 cups fresh lime juice
    1 cup olive oil
    4 large cloves garlic, minced
    2 tsp crushed red pepper flakes
    2 tsp salt
    8 boneless, skinless chicken breast halves, (about 6 oz. each)
    In bowl whisk together lime juice, olive oil, garlic, red pepper flakes and salt. Divide chicken into two resealable plastic bags. Pour half the marinade into each bag. Seal and refrigerate 8 hours or overnight, turning several times.
    Heat broiler, setting rack 4 inches from heat; or prepare a charcoal grill with hot coals, setting rack 4 inches from coals; or heat a gas grill to high.
    Remove chicken from marinade; discard marinade. Place chicken on grill rack. Broil or grill chicken, turning frequently, 6-7 minutes per side or until an instant read thermometer registers 170 degrees F.


    Sangria --serves 8
    "The drink comes from my mother's friend. I adopted the recipe and serve it at every summer gathering," says Rimes.
    2 cups apple juice
    ½ cup sugar
    ½ cup mint leaves
    3 cinnamon sticks
    2 bottles dry white wine (750 ml each)
    2 ripe peaches, pitted and sliced
    2 ripe pears, cored and sliced
    2 oranges, sliced
    1 lemon, sliced
    2 bottles chilled sparkling apple cider (750 ml each)
    Mint sprigs for garnish
    Pour apple juice into two ice cube trays. Freeze 4 hours or overnight. In a small saucepan bring to boil 1¼ cups water, sugar, mint, and cinnamon sticks. Reduce heat; simmer for 5 minutes or until sugar has dissolved. Let cool to room temperature. Discard mint and cinnamon sticks.
    In large punch bowl combine mint sugar water, fruit and white wine. Cover with plastic wrap and refrigerate overnight. Before serving add apple ice cubes and sparkling apple cider. Garnish with mint sprigs.

    Tim McGraw Spaghetti Casserole
    1 12-ounce package spaghetti 1 tablespoon sugar 3 cups cheddar cheese, grated 1 pound hamburger meat 1 2 1/4- ounce can mushrooms 1 can tomato soup 1/2 cup milk 1 15-ounce jar spaghetti sauce Chopped onions, to taste
    Cook spaghetti. Drain and set aside. Brown hamburger meat with chopped onions.
    Put half of cooked spaghetti in bottom of buttered 2 1/2- or three- quart casserole dish. Sprinkle with half the sugar. Sprinkle half the cheese on top, then half the hamburger, then half the mushrooms.
    Mix together soup, milk and spaghetti sauce. Pour a thin layer over the casserole. Repeat the layers of spaghetti, sugar, cheese, meat and mushrooms. Pour the rest of the soup mixture over the top. Bake for one hour in a preheated 350-degree oven.

    When I was in Memphis they had "fried" corn on the cob. Just BBQ some corn on the grill and then roll in corn meal and deep fry.

    Low fat and very healthy for you.

    Loretta Lynn's Coal Miner's Daughter's Gooey Cake
    1 box German chocolate cake mix 1 can sweetened condensed milk 1 cup Cool Whip 3 Heath candy bars, frozen 1 jar caramel topping
    Bake cake according to package directions. While warm, pokes holes halfway into cake, about one inch apart. Pour condensed milk into holes. Pour caramel over cake and refrigerate. Once cooled, top with Cool Whip and crushed candy bars.
    Refrigerate overnight.

    Reba McEntire's Praline Sweet Potato Casserole
    1 large can sweet potatoes, drained 1/4 teaspoon salt 1 teaspoon vanilla extract 1/2 teaspoon cinnamon 1/3 cup granulated sugar 1/4 cup margarine, melted 2 eggs
    Topping
    1/4 cup margarine, melted 3 tablespoons flour 3/4 cup brown sugar 1/4 cup pecans, chopped
    Mash potatoes. Add salt, vanilla extract, cinnamon, sugar, melted margarine and eggs. Put into greased casserole. Mix topping ingredients and sprinkle over top of potato mixture. Bake at 350 degrees for 30 minutes.

    I have to go eat dinner now....
    I might have to try that.


    Thought with all the alcohol drinkers in here they may need something else to do also like cook for there friends or have food for the tail gate parties....

    I can give you many "southern" recipes but they will all kill you at a very early age. I sure do miss the good stuff.

    We all need a little good down home comfort and old childhood memories...
    I know are next generation needs more then memories of red bull and starbucks and alchohol...hehehe

    O.k. horse

    My moms milk gravy:

    start with bacon grease (bits of bacon is a o.k.) Best made in an iron skillet that's at least 50 years old. If not available then any other skillet will do.

    make sure the bacon grease is hot and then add a couple of table spoons of flour and stir like crazy into what looks like a dark brown paste. If your rich then slowly add milk and stir like crazy. If you are poor then add 1/2 milk mixture with 1/2 half water and also stir like crazy. This will thicken up after awhile of stirring. This is called "milk gravy". It's a southern staple which is poured over a plate of 1/2 of bisquits pulled apart into bite size pieces vs the rest of the plate of fried potatoes (also fried in bacon grease). Once the whole plate is covered in milk gravy then eat.

    Please make sure that I'm the beneficiary of your will!!!!

    I just had biscuits and gravy at Keedys in palm desert on Tuesday morning with a friend and client that was in town visiting from Texas on her way to her new built home on Orcus Island in the San Juan islands....

    Loretta Lynn's Best Peanut Butter Fudge
    3 Cups Sugar
    1 Teaspoon Cocoa
    3/4 Cup Water
    1 Stick Butter
    1 Teaspoon Vanilla Extract
    1 Cup Smooth Peanut Butter

    In a large bowl, mix sugar and cocoa well. In a saucepan, bring water to boil over high heat. Reduce heat to medium and add cocoa mixture. Cook to soft-ball stage of about 10 minutes. Reduce heat to low and add butter and vanilla. Stir until butter melts. Remove the pan from the heat and quickly add peanut butter. Stir just until blended. Pour immediately into a greased 9x9x2-inch baking pan. Score 1-inch squares while warm. Let cool about 20 minutes and cut when firm.

    I make this every summer who knew so did Billy Ray Cyru's????

    I use vanilla extract instead of lemon juice...

    This was submitted by The Bellamy Brothers into a country singer cookbook. These are so nice and light and fluffy! Even better with extra icing! (A tip for you: to slice easily, use thread. Just wrap it around the dough once and pull both sides of thread in opposite directions.)

    Ingredients
    • 1 (1/4 ounce) package active dry yeast
    • 1/2 cup warm water (105 to 115 degrees)
    • 1 cup milk
    • 3 tablespoons sugar
    • 1 teaspoon salt
    • 1/4 cup cooking oill
    • 4-4 1/2 cups all porpose flour
    • 1/4 cup margine or butter, melted
    • 3/4-1 cup packed brown sugar
    • 1-2 teaspoon ground cinnamon
    • 1/4 cup raisins (optional)
    • 1/4 cup choppedpecan (Optional)
    • 1 cup sifted powdered sugar
    • 1/4 teaspoon vanilla
    • 1-2 tablespoon water
    Directions
    1. 1

      Soften yeast in warm water in a small bowl. Heat milk, sugar, salt and oil till warm (115-120 degrees). Turn into large mixing bowl. Add the yeast mixture. Stir in as much flour as you can.
    2. 2

      Turn dough out onto lightly floured surface. Knead in enough remaining flour to make a moderately soft dough that is smooth and elastic (3-5 minutes total).
    3. 3

      Shape into a ball in a greased bowl; turn once. Cover; let rise in warm place till double (about 1 hour). Punch dough down. Turn onto a floured surface. Cover; let rest for 10 minutes.
    4. 4

      Roll dough on a lightly floured surface to an 18 by 12-inch rectangle. Spread melted margarine or butter over dough. Combine brown sugar and cinnamon; add raisins and nuts, if desired. Sprinkle sugar mixture over dough. Roll up from one of the long sides. Seal.
    5. 5

      Slice into 12 pieces. Place, cut side down, in a greased 13 by 9 by 2-inch baking pan. Cover, let rise in a warm place till nearly double (30 mins.). Bake in a 350 degree oven for 25 to 30 minutes. Cool slightly. Remove from pans.
    6. 6

      For icing, combine the powdered sugar, vanilla and enough water to make icing of drizzling consistency. Drizzle over warm rolls.
