All i can say is WOW!!!! Thank you all for showing up and kicking off the weekend right! It was great to put a face to the typing. I had a great weekend and am only now able to function enough to type out what has been muddled around in my worthless head for the past few days. Monterey Rice – AngieMarie123 Version
1 cup of long grain white rice
2 cups of water
3 chicken bouillon cubes
16oz of sour cream
¾ cup of grated jack cheese
¾ cup of grated cheddar cheese
7 oz. can of diced green chilies
Salt & pepper
In a saucepan: Bring rice, bouillon cubes, and water to a boil, then reduce heat to low and simmer until rice is done. Appx. 12-15 minutes. Stirring occasionally.
In a large bowl: Mix sour cream, green chilies, cheese, salt & pepper (to taste), Add cooked rice and mix well.
In a casserole dish: Butter casserole pan thoroughly and then add rice.
Bake: for 15 minutes at 400 degrees, then reduce heat and bake for additional 20-25 minutes.
For doubling recipe: bake 10-15 minutes longer, and it doesn’t affect the recipe to reduce some of the sour cream and cheese. I usually double this and use 24oz of sour cream and 2 ½ cups of cheddar / jack blend or Mexican blend of cheese.
