SCMB - Meat N' Greet Taco Feed Potluck

I thought I would roll out the welcome mat and invite the SCMB’s over to our spot for a Taco Feed Thursday evening. Ive met some really cool people on this board and they are even more fun in person! This is what I’m thinkin… I will cook up a bunch of Chicken and Carne Asada, warm up some tortillas and set out all the fixings street taco style. Anyone who wants to come over can bring some chips, dips, or side dishes, and their own drink.

• 6pm Thursday – ED1 (hopefully center isle again)
• BYOB
• RSVP here on this thread – I will only cook as much as I see the need for (Lurkers need not show up, must be a SCMB Member)
• Indicate what you can bring so we don’t end up with 20 bags of chips. (beens, rice, dips, desserts, shots, etc. are all good ideas)
• Vegetarians and food allergy people... your fending for yourself. Please feel free to come and we can work something out.

One rule… For a free taco, you must introduce yourself to me with your SCMB handle so I can get to know you. This is the whole reason for me doing this, so I can meet you all.

We will have a few chairs and tables and hopefully plenty of space at the bar, but if you want to ensure you can sit down, I suggest you bring a chair. I will have a beer pong table set up and you can also try your chance to win a bottle of Patron Silver at the Ring Game (thanks to Festival Fan for the ring game, announcement to come on that later)

Look for the black and white Whiskey Tango flag and I will rock some 80s music startin at 6 (since we will hear enough country all weekend). You can also see my photo album 2010 for what my RV and trailer look like. (I will post a photo of the flag and set up when we get closer)

This sounds like so much fun! I'm unsure of what time we'll be getting in Thursday but I'm dying to meet everyone in person. Do you think you'll be hanging around the same spot for the evening? I think we'll be arriving around 6 or 7, so count me in (maybe fashionably late) and I'll bring some guacamole! Plus two friends (who are not huge eaters, more just drinkers).

I'll probably bring more salsa. My vitamix makes AMAZING salsa in literally less 5 minutes. Also amazing guac, so I can prob make some of that too.

I got an iphone yesterday so i will be able to post on this thread where we end up parked at. (incase anyone else has smart phones or internet access) I will also post another couple pictures a couple days before arrival.

I hope 1,000 paper plates, 500 plastic forks, and 500 red cups will be enough. (Got to buy them anyway for the group so dont sweat it)

Just bring your own serving items for anything you plan to bring. (salad tongs, serving spoon, etc...) I will put out a couple tables to put the food and utensils and we cand make a buffet line. Im also working on a couple tables/bartops that people can sit or stand around and eat/drink.

I think we got all the food covered unless someone sees something that we missed. If you want to bring something, I would suggest a couple gallons of fresh lemonade (or even concentrate) and some strawberries. I can spike it with a bottle of bicardi limon and make a great electric lemonade. If anyone is so inclined they can even bring the bottle of bicardi limon but dont sweat it, i will have plenty!

As the number grows, I want to put this out there so you all can plan accordingly and there is no akward moments between you and me... With 50 people, I will not be opening up my RV toilet to everyone so please dont ask and please plan to walk to the nearest honey hut. Even if half of everyone used it one time, it would fill my grey tank the first night because i have a very small tank. I hope you all understand.

Mint leaves... I can twist up some mojitos if someone brings enough mint. Sometimes people have this growing in their back yard thats why i suggest it.

I think it's safe to say we'll stop by the party. I'll at least bring some chips and try to make something else. Probably 4 of us.

Yes my trailer is a vehicle made for sleeping... and i will be allowed inside the camping area... But there is some grey area that I tread very cautiously on. I never claim to be an exception to any rules and I respectfully follow the rules outlined as close as possible for the safety of everyone around me. The Grill-Top is a very expensive and properly UL listed piece of kitchen equipment that meets all industry standards of safety. (its not some home depot bbq from a buddies back yard) It is inside my trailer that is made for sleeping that i am bringing into the camping area much like any cooking device that you keep in your trailer/RV. With that being said, I feel that i am following the rules outlined and would have an argument to use my set up. On the other hand, if people of authority or people who own the property that we are staying on say i cannot use it and shut me down, I am happy to oblige and will promptly move to my plan B without running the risk of being removed from the camping area.

The trailer has many more purposes than simply "sneaking in a BBQ" at stagecoach. I use it 10-15 times a year for camping trips, tailgating events, and even daytrips to the beach. I really only plan to only use the grill-top once or twice in the campgrounds and I am prepared not to use it at all. I say all this because I know other people are reading this and might get some ideas to build something similar without putting much thought into safety, fire protection, and back up plans when they cant use it. Believe me when I say that all these details were considered in the preparation and building of this trailer.

On the other hand, if people of authority or people who own the property that we are staying on say i cannot use it and shut me down, I am happy to oblige and will promptly move to my plan B without running the risk of being removed from the camping area.

The trailer has many more purposes than simply "sneaking in a BBQ" at stagecoach. I use it 10-15 times a year for camping trips, tailgating events, and even daytrips to the beach. I really only plan to only use the grill-top once or twice in the campgrounds and I am prepared not to use it at all. I say all this because I know other people are reading this and might get some ideas to build something similar without putting much thought into safety, fire protection, and back up plans when they cant use it. Believe me when I say that all these details were considered in the preparation and building of this trailer.

I could marinate some chicken for taco, I make a mean Citrus Marinated Taco, from Chix Breast and has orange juice and chipotle chilies. You are just like me, have trust issues when it comes to pp bringing anything for the main food event item... lol i always say oh no just bring dessert, or chips.... I agree, condiment pp must be on time or early... But i think we got a great group here and we can trust them all to be there... You can always have a back up stock, in case you need to use it and then just add the other stuff to your stock for the rest of the weekend....

I'll do both. The guacamole I can do in larger batches in my Vitamix (yes, I have one, it's amazing). And for some reason when I make it in that thing, it stays fresh longer than 24 hours. It didn't turn brown at all when I made it a few weeks ago and I didn't even leave a pit in the container. No idea why. Even the salsa I make in that thing (instead of spending hours chopping) tastes better.

It didn't turn brown at all when I made it a few weeks ago and I didn't even leave a pit in the container. No idea why. Even the salsa I make in that thing (instead of spending hours chopping) tastes better.

Karena's Quac is a must have. After a camping trip I took some of the left over in with me to a restaurant for my burger. IT IS YUMMYLISCIOUS.


Eddie it will be me and Jeremy. I am going to try my hand at a spiked watermelon. Wish me luck. I think I will ask Kat and Lisa for some tips :D

I already made a urinal out of a 5gal jerry can and a plastic funnel. It will be by the front drivers door of my RV if you want to pee in it! (this way hopefully the grass wont start smelling like pee again)

I was going to buy plates and plastic ware from costco. Its impossible to buy less than 200 of each so I got that covered.

Kuzn Edy, Our 2 tenting campers will be bringing sliced watermelon and strawberries.

Jim will bring the table round when you are set up in the morning and if you need it, I have a 30" electric griddle and a long outdoor extension cord as well as a small collapsible tv type table to set it on. If you need any extra hands to set up early or set things out since we will be there, just let us know
