Other threads I like to read and follow are the FOOD threads because i am usually the cook wherever we go.... so heres to 2012.
Whats your recipes and plans for cooking all weekend? What are your tips and tricks for dealing with the restrictions and feeding your group.
My tips and tricks are to make as much as possible before we head out so I can spend more time enjoying the festival and less time cooking or prepping food. Think out each meal and plan ahead. For example... If we are doing tacos on thursday night I will pre cook all the meat, cut all the onions and cilantro and cheese AT HOME. Then bag it all up in seperate containers and put everything you need for this one meal in one large bag. When thursday night comes i just grab the one big bag and im not looking around or gathering stuff up. (I basically could do it blindfolded or incapacitated ). Then warm up the meat and tortillas and BAM!
Here is my current recipe for Pork Carnitas:
2 teaspoon salt
2 teaspoon garlic powder
2 teaspoon ground cumin
1 teaspoon crumbled dried oregano
1 teaspoon ground coriander
4 pounds boneless pork shoulder roast or picnic
roast
2-3 bay leaves
1/2 cup chicken broth (or 1/2 a can)
Mix all dry ingredients together and coat pork. Place the bay leaves at bottom of a crock pot and place pork over. drop in the 1/2 can of chicken broth. Set for 10hrs and forget. Pull meat out and store in container. When ready to eat pull out and fry up in pan on really hot for just a minute or two to get it crispy. YUM!
