What are your menu plans for SC? I'm thinking about going a little higher end then the standard this year.

we've seen great feasts in the RV section...shrimp, sausages, kabobs, dips, appetizers...amazing to see how so many people really have a great time cooking .. but the nicest part, is when when we're included to join them. very nice..

I just wish we were able to grill. That would open up all options for me.

BEER! haha ;) Well the first year I came with some extra family so I didnt really have to worry about food, but last year we did an all guys trip and bought all this food and had a big menu planned, but when it came to it, nobody wanted to cook it! :mad: haha. So this year we are just bringing some Burgers, Dogs, and Sandwich stuff:D

I am currently testing some stuff where I can precook it, freeze it, then just heat it up while we are there. If that doesn't work out, homemade mac-n-cheese is always great to heat up in the RV microwave.

Who knows, BEER might be my only meals of the weekend. :D

midnight comfort food is always a good choice. Pizza, mac-n-cheese, california sushi rolls etc. stuff that's already prepared, easy on the tummy and no clean up.

The menu is set!

Thursday night: Dinner on the road

Friday morning: chorizo and egg burritos with homemade red salsa. Bloody Marys or screwdrivers

Friday night: 4 cheese sauce mac-n-cheese with tomatoes, fresh basil, and asparagus. Beer

Saturday morning: English muffin sandwiches (English muffins, asparagus, eggs, freshly grated Parmesan cheese, served with a hollandaise dressing.) Bloody Marys or screwdrivers

Saturday night: Homemade Smoked Paprika Beef and Pork Chili topped with cheddar cheese, sour cream, and scallions. Beer

Sunday morning: Breakfast burritos bar (eggs, spinach, bacon, sausage, diced ham, green bell peppers, sauteed onions, flour tortillas, limes, avocado, pepper jack cheese) Bloody Marys or screwdrivers

Sunday night: Chicken Parmesan with blue cheese whipped potatoes. Beer

Monday morning: English Muffin Breakfast Pizzas (English muffin, tomatoes, olive oil, Canadian bacon, mozzarella cheese, and fresh basil. Bloody Marys or screwdrivers

Snacks: 2 lbs. of Pig candy, tuna noodle casserole, deli sandwiches, and chips and junk.
