Ok ladies...and men? I am going to be feeding 4 grown men, who are going to be drinking ALL day. Its only my grirlfriend and I, and somehow I ended up being the one to be responsible for cooking[whats new]. Does anyone have any EASY suggestions so im not slaying over the stove all day??? I only have a stove and Microwave in our toy hauler, no oven:[

if you have a fridge i suggest making something like a casserole( mac n' cheese, something not too fancy but easy) that way you can keep it in fridge and they can be in charge of warming up their own plates in the microwave---at least for one meal so you can have some fun too!
i have some great-- EASY recipes if you decide to go this way. i don't know how much of a chef you are but i have a few recipes that will have your campers thinking you ordered take out---they won't believe it just came out of the microwave!

I would say: tortillas, refried beans, cheese and salsa for burritos. You can also do breakfast burritos. Yummy.
Chili, cheese and fritos for fritolates. Just mix it all together. Tastes great with the chili cheese fritos.
Lunch meat, cheese, bread, etc. for sandwiches. Also PB&J.
I'm not going to have a heat source in the Forum campground so I'm doing the Mountain House camping meals. I've taste tested a few and they're not bad.
It's hot so don't look to need to cook a lot of things. You're going to want to have something refreshing.
Just keep in mind how much time you will actually be in camp and plan accordingly.
I'll let ya know if I come up with any more.:)

I'm making a loaf of blueberry bread and slicing it to put into a ziploc baggy. I got some whipped butter that says it's easily spreadable even when cold (we'll see about that).
Pasta salads, casseroles like Miss B said, tuna salad.....

Thank You guys for alll your input. Yes My goal this weekend is most definetly to be out of the trailor enjoying the BEEAAUUUUUTiful sunshine. I know we wont be at our trailor majority of the time but I want to make sure Everyone eats, or snacks...and stays fully hydrated on SOME non alcoholic beverages. =]

My suggestion is to make as much as you can before you leave or go to the grocery store and go straight to the deli section and stock up. Tamales, burritos, sandwiches, salads, can all be made or bought before you even leave home. Then when someone wants something to eat tell em to get it themselves and grab you a beer.

Lasagna is easy to make ahead of time and pop in the oven, prewash/cut romaine lettuce, bring caesar salad dressing, a bit of parmesan, and a loaf of sourdough with butter 'n garlic salt.
Chicken enchiladas is another one easy to make ahead of time and the sides are easy - Spanish rice, mexican caesar salad ...and margaritas!

To make it easy and the store bought version here ya have it.. I make my own dressing versus buying a bottle.
Romaine prewashed/cut, etc.
El Torito Mexican Casesar Salad dressing
Pepitos - pumpkin seeds
Cotija cheese
Crumble some tortilla chips in your hand to add crunch/color!
To substitute cotija cheese use jack cheese or spicy jack...

Fresh fruit is always nice and refreshing to have too .. So if you cut it up ahead of time and or buy a platter/frozen ... usually stuff ready cut is easier on everybody! You can literally plunk it on the table and continue to hang out versus standing in the kitchen slaving away while everybody else is having fun!~

great advice.. fruit is a major crowd pleaser and helps you stay hydrated as well

We like to get frozen meatballs, put them in a container with spagehtti sauce, then put them in the fridge. Also bring deli rolls of some sort. Then you can shove em in the micro, for instant meatball sandwiches....add cheese and you're good to go......or just eat the meatballs solo. Very little prep, fast and easy:)

Smart and Final has some good stuff as well. There are these frozen
BBQ Chix sandwiches, Angus cheese burgers, and Tony Romas Rib sandwiches throw in Micro for 45 seconds to 1min. yum Oh hot pockets, pizza rolls.
Salad mixes are good and refreshing. (I'm addicted to strawberries and sunflowers in my salads with a rasberry spritz salad dressing.) Lunchables.
If you have power in your rig/toy hauler a pizza/toaster oven is great for those smaller pizza's, chix fingers.
My daughter loves those Tuna packages that come with the crackers and mayo. Hormel has these lil meal things they don't need refrigiration you just nuke em.
My family calls me the nuker and reheater of the family. My hubby used to make all the big meals, I am getting better though.

You can get some "DRY ICE" at Smart and Final. Then you put it in one of those styrofum coolers. Thats how Omaha steaks were delivred the cooler stayed cold for 3 days. Then load it with lunch meats.
How about nuts, trail mix, power bars. But with you Hodgee, I'm sure all the ladies will take care of you, Marshal well I dunno.........j/k

Heck yes. we used this for ice cream once and they were rock solid for 2 days....the first day, even harder than they would have been in the freezer. Still haven't figured out what I'm going to store with this idea though.

As far as ice goes...
Last year we left Thursday evening after work and went to a semi-local ice place (google it!) in the Valley. We got one big block of ice, put that on the bottom, threw our drinks, etc in there, then topped it off with ice cubes and it lasted until we left Monday morning without having to refill with ice.
Some of the cubes melted, but the huge block was the total trick!
This year, we're getting in early on Friday and then heading to the local store to buy our food/drinks and ice, so we may have to refill because we won't have the huge block.

I still don't know if I'm going to make it this year. There is a glimmer of hope Doug had said maybe I could go with this friend of mine, but she changed her plans. So I am still hopefull.

Order couple pizza's Wednesday night and make the famous foil triangles... Twist up a dozn breakfast burritos in foil and ziplock em... Make your weekends worth of sandwiches and bag em up... Buy a whole cooked chicken at the store and foil the bird up... Get some fried chicken and bag it up... Bring in that big ass carp and make sushi (I know the pier fishermen would eat it)
If you want hot food just get a giant magnifying glass... they didnt say anything about those yet!

I don't usually leave enough room for food in the ice chest (lol) but my buddy and I take snacks that don't need to be kept cool. We usually leave the camp ground and pick up food to bring back to the Forum. Little Ceasers is right down the street.:D

okay this is weird...BUT, PICKLE JUICE after tequila shot. Im not a tequila do-er but, this eliminates the after taste...and makes it yummy=] try it.:D

I proved myself during the first family party I went to with him.... I drank quite a bit of tequila even though I hate it ("*damn* white girl can drink!!"). Next time I'll have to try to champagne or pickle juice chaser after those tequila shots!

at the bar, trust me...I ONLYY request that as a chaser...and they look at me like an idiot, but whatever unless you know the bartender..you wont ever see them again. And im sure they've had some pretty intense requests as far as drinks, chasers, and etc.
So who cares, ask for pickle juiceor champagne=]

Put the dry ice on TOP....cool air sinks.....just dont let it touch the food or it will be SOLID!!

As far as the pickle juice and tequila...I dont think it keeps you from puking it up...and I would imagine if you did...The taste would be awful..but at least going down it actually taste good lol.

WOW! Pickle juice. That's one I've never heard before. Tequila goes nicely with a Coke back or Squirt back. Fresca is also amazing because it doesn't have any calories ... don't laugh, I keep track! Pinot Grigio, Vodka, Fresca, squeeze of lime, and ice = the best daytime beverage.

That's how we roll at the river! It's great because you can premake it and even throw it in the freezer for a bit before heading out!~ Squeeze of fresh lime.. MMMM refreshing!~

me either. and i think of two...and then go to write it and say dang ittt~! i came back from lunch..and there were like 3 additional pages...i was laughing so hard. ahhh i feel much better now. I didnt ruin that thread but i still got to tell everyone how hard it made me laugh to read everyones thought in that whole wopping hour i was away.
