Ok...
Thought this would be a good thread for those who love to cook.
Many Country singers have favorite recipes and what a better place to share them.Post your recipes. It will be a long summer with lots a family and friends around....:cool:
Johnny Cash’s Old Iron Pot Family-Style Chili
Johnny Cash’s sister Joanne presents his family-style chili recipe.
Ingredients
5 pounds sirloin steak, chopped
Shortening
3 pkgs. chili seasoning mix
3–4 15-oz. cans red kidney beans
3–4 16-oz. cans whole tomatoes
All
seasoning to taste
Cumin
Thyme
Sage leaves
Garlic powder
Onion powder
Salt to taste
Chopped onions
Chili peppers
2 tbsp. sugar
Chili powder
Chili con carne seasoning
1 can tomato pastePreparation
Brown the meat with a little shortening until medium. Add chili seasoning and cook 5 minutes. Add beans, tomatoes, spices to taste, onions, chili peppers to taste, sugar, chili powder and/or chili con carne seasoning to taste. (If chili is too hot, add 1 to 2 cans tomatoes.) Add tomato paste.
If chili seems too thick, add water. Simmer on low for 20 minutes.Serves 12

Award-winning Country music singer LeAnn Rimes shares her recipes for Cabo Chicken and Sangria.
Cabo Chicken -- serves 8
2 cups fresh lime juice
1 cup olive oil
4 large cloves garlic, minced
2 tsp crushed red pepper flakes
2 tsp salt
8 boneless, skinless chicken breast halves, (about 6 oz. each)
In bowl whisk together lime juice, olive oil, garlic, red pepper flakes and salt. Divide chicken into two resealable plastic bags. Pour half the marinade into each bag. Seal and refrigerate 8 hours or overnight, turning several times.
Heat broiler, setting rack 4 inches from heat; or prepare a charcoal grill with hot coals, setting rack 4 inches from coals; or heat a gas grill to high.
Remove chicken from marinade; discard marinade. Place chicken on grill rack. Broil or grill chicken, turning frequently, 6-7 minutes per side or until an instant read thermometer registers 170 degrees F.:)
Sangria --serves 8
"The drink comes from my mother's friend. I adopted the recipe and serve it at every summer gathering," says Rimes.
2 cups apple juice
½ cup sugar
½ cup mint leaves
3 cinnamon sticks
2 bottles dry white wine (750 ml each)
2 ripe peaches, pitted and sliced
2 ripe pears, cored and sliced
2 oranges, sliced
1 lemon, sliced
2 bottles chilled sparkling apple cider (750 ml each)
Mint sprigs for garnish
Pour apple juice into two ice cube trays. Freeze 4 hours or overnight. In a small saucepan bring to boil 1¼ cups water, sugar, mint, and cinnamon sticks. Reduce heat; simmer for 5 minutes or until sugar has dissolved. Let cool to room temperature. Discard mint and cinnamon sticks.
In large punch bowl combine mint sugar water, fruit and white wine. Cover with plastic wrap and refrigerate overnight. Before serving add apple ice cubes and sparkling apple cider. Garnish with mint sprigs.:cool:

Tim McGraw Spaghetti Casserole
1 12-ounce package spaghetti 1 tablespoon sugar 3 cups cheddar cheese, grated 1 pound hamburger meat 1 2 1/4- ounce can mushrooms 1 can tomato soup 1/2 cup milk 1 15-ounce jar spaghetti sauce Chopped onions, to taste
Cook spaghetti. Drain and set aside. Brown hamburger meat with chopped onions.
Put half of cooked spaghetti in bottom of buttered 2 1/2- or three- quart casserole dish. Sprinkle with half the sugar. Sprinkle half the cheese on top, then half the hamburger, then half the mushrooms.
Mix together soup, milk and spaghetti sauce. Pour a thin layer over the casserole. Repeat the layers of spaghetti, sugar, cheese, meat and mushrooms. Pour the rest of the soup mixture over the top. Bake for one hour in a preheated 350-degree oven.
When I was in Memphis they had "fried" corn on the cob. Just BBQ some corn on the grill and then roll in corn meal and deep fry.
Low fat and very healthy for you. :eek:

Loretta Lynn's Coal Miner's Daughter's Gooey Cake
1 box German chocolate cake mix 1 can sweetened condensed milk 1 cup Cool Whip 3 Heath candy bars, frozen 1 jar caramel topping
Bake cake according to package directions. While warm, pokes holes halfway into cake, about one inch apart. Pour condensed milk into holes. Pour caramel over cake and refrigerate. Once cooled, top with Cool Whip and crushed candy bars.:D
Refrigerate overnight.

Reba McEntire's Praline Sweet Potato Casserole
1 large can sweet potatoes, drained 1/4 teaspoon salt 1 teaspoon vanilla extract 1/2 teaspoon cinnamon 1/3 cup granulated sugar 1/4 cup margarine, melted 2 eggs
Topping
1/4 cup margarine, melted 3 tablespoons flour 3/4 cup brown sugar 1/4 cup pecans, chopped
Mash potatoes. Add salt, vanilla extract, cinnamon, sugar, melted margarine and eggs. Put into greased casserole. Mix topping ingredients and sprinkle over top of potato mixture. Bake at 350 degrees for 30 minutes.

When I was in Memphis they had "fried" corn on the cob. Just BBQ some corn on the grill and then roll in corn meal and deep fry.

I can give you many "southern" recipes but they will all kill you at a very early age. I sure do miss the good stuff.

It is moderation and making good healthy choices 95% of your week...
We all need a little good down home comfort and old childhood memories...
I know are next generation needs more then memories of red bull and starbucks and alchohol...hehehe:D

My moms milk gravy:
start with bacon grease (bits of bacon is a o.k.) Best made in an iron skillet that's at least 50 years old. If not available then any other skillet will do.
make sure the bacon grease is hot and then add a couple of table spoons of flour and stir like crazy into what looks like a dark brown paste. If your rich then slowly add milk and stir like crazy. If you are poor then add 1/2 milk mixture with 1/2 half water and also stir like crazy. This will thicken up after awhile of stirring. This is called "milk gravy". It's a southern staple which is poured over a plate of 1/2 of bisquits pulled apart into bite size pieces vs the rest of the plate of fried potatoes (also fried in bacon grease). Once the whole plate is covered in milk gravy then eat.

I just had biscuits and gravy at Keedys in palm desert on Tuesday morning with a friend and client that was in town visiting from Texas on her way to her new built home on Orcus Island in the San Juan islands....

Loretta Lynn's Best Peanut Butter Fudge
3 Cups Sugar
1 Teaspoon Cocoa
3/4 Cup Water
1 Stick Butter
1 Teaspoon Vanilla Extract
1 Cup Smooth Peanut Butter
In a large bowl, mix sugar and cocoa well. In a saucepan, bring water to boil over high heat. Reduce heat to medium and add cocoa mixture. Cook to soft-ball stage of about 10 minutes. Reduce heat to low and add butter and vanilla. Stir until butter melts. Remove the pan from the heat and quickly add peanut butter. Stir just until blended. Pour immediately into a greased 9x9x2-inch baking pan. Score 1-inch squares while warm. Let cool about 20 minutes and cut when firm.

This was submitted by The Bellamy Brothers into a country singer cookbook. These are so nice and light and fluffy! Even better with extra icing! (A tip for you: to slice easily, use thread. Just wrap it around the dough once and pull both sides of thread in opposite directions.)
Ingredients
1 (1/4 ounce) package active dry yeast
1/2 cup warm water (105 to 115 degrees)
1 cup milk
3 tablespoons sugar
1 teaspoon salt
1/4 cup cooking oill
4-4 1/2 cups all porpose flour
1/4 cup margine or butter, melted
3/4-1 cup packed brown sugar
1-2 teaspoon ground cinnamon
1/4 cup raisins (optional)
1/4 cup choppedpecan (Optional)
1 cup sifted powdered sugar
1/4 teaspoon vanilla
1-2 tablespoon waterDirections

Soften yeast in warm water in a small bowl. Heat milk, sugar, salt and oil till warm (115-120 degrees). Turn into large mixing bowl. Add the yeast mixture. Stir in as much flour as you can.

Turn dough out onto lightly floured surface. Knead in enough remaining flour to make a moderately soft dough that is smooth and elastic (3-5 minutes total).

Shape into a ball in a greased bowl; turn once. Cover; let rise in warm place till double (about 1 hour). Punch dough down. Turn onto a floured surface. Cover; let rest for 10 minutes.

Roll dough on a lightly floured surface to an 18 by 12-inch rectangle. Spread melted margarine or butter over dough. Combine brown sugar and cinnamon; add raisins and nuts, if desired. Sprinkle sugar mixture over dough. Roll up from one of the long sides. Seal.

Slice into 12 pieces. Place, cut side down, in a greased 13 by 9 by 2-inch baking pan. Cover, let rise in a warm place till nearly double (30 mins.). Bake in a 350 degree oven for 25 to 30 minutes. Cool slightly. Remove from pans.

For icing, combine the powdered sugar, vanilla and enough water to make icing of drizzling consistency. Drizzle over warm rolls.

Peach Crunch Cake
Joe Nichols made this peachy dessert you can enjoy anytime!
Ingredients
21-oz. can peach pie filling
1 package yellow cake mix
½ cup toffee bits
1 stick (½ cup) butter cut into small piecesPreparation
Spread peach filling in 9-by-9-inch baking pan.
Pour dry cake mix on top of fruit filling. Swirl with knife until cake mix is wet.
Place toffee bits on top.
Dot with butter.
Bake in preheated oven at 350° for 45 minutes.
Let sit for a few minutes, then add a scoop of ice cream on top.Serves 6 – 8

Memphis Style Baby Back Ribs
Memphis, TN is famous for Elvis Presley, Graceland and fantastic barbecue.ngredients
Rib Rub
4 teaspoons paprika
2 teaspoons salt
2 teaspoons onion powder
2 teaspoons fresh ground black pepper
1 teaspoon cayenne pepper
4-5 lbs baby back ribs
1-2 cup barbecue sauce (I use Memphis Barbecue Sauce recipe 99023)Directions

Wash the ribs and pat dry with paper towels.

Place each slab of ribs on a sheet of heavy duty aluminum foil and rub well with rib rub.

Seal the foil and place in refrigerator for 4 to 6 hours.
4
Remove from refrigerator and place sealed packed in a 275 degree preheated oven.
5
Cook for 3 to 4 hours or until tender.
6
Baste both sides of ribs with Memphis Barbecue Sauce recipe 99023 and grill 5 to 7 minutes per side.
7
Serve with extra sauce and lots of paper towels.

Take biscuits out of tube and separate in half.

Put bottom halves in the bottom of a 9" square pan or deep dish pie plate-- I spray mine with Pam first.

Spoon chili mixture over biscuits.

Top with remaining biscuits torn side down.

Sprinkle with cheese.

Bake at 350 degrees for 16-18 minutes until biscuits are brown and cheese is melted.

Ingredients

1 can cream of mushroom soup, undiluted
1 can water chestnut, drained and sliced
1 jar cheez whizz (16 oz)
1 cup raw Minute Rice
1 cup craker crumbsDirections

Preheat oven to 375F degrees.

Steam broccoli just until crisp.

Drain.

Mix broccoli, soup, water chestnuts, Cheez Whiz and rice and place in greased 2-quart casserole.

Top with cracker crumbs.

Bake 20-30 minutes , or until bubbling.

John Berry’s Neapolitan Lasagna
Ingredients
2 slices bacon, minced
4 tbsp. butter or olive oil
1 clove garlic, whole
½ onion, minced
1½ lb. ground beef
½ lb. Italian sausage
1 tsp. oregano
1 tbsp. parsley
½ cup white wine
Four 15-oz. cans tomato sauce
¼ tsp. salt
1 lb. ricotta cheese
2 eggs, beaten
½ cup fresh parmesan cheese
1 lb. lasagna
2 pkg. shredded mozzarella cheesePreparation
Preheat oven to 350°. Place bacon, butter, garlic and onion in saucepan and sauté gently for 5 minutes.
Discard garlic and add beef, sausage, oregano, and parsley. Simmer until meat is brown.
Add wine and cook until evaporated.
Add tomato sauce and salt and simmer uncovered for 30 minutes.
Season to taste and simmer 15 more minutes.
Mix ricotta cheese, egg, parmesan cheese and a dash of pepper into a smooth paste.
Butter a 9-by-13-inch pan and cover bottom of pan with sauce, lasagna, dots of ricotta, and mozzarella. Continue until pan is full.
Cover with plenty of sauce and mozzarella.
Bake for 30 minutes.Serves 6

George Strait's Carne Guisada
Ingredients
1 lb round steak, cubed
2 tablespoons butter
1 medium onin, sliced
1/4 green bell pepper, sliced
1 tablespoon flour
2 cloves garlic
1/2 can tomato (10 oz)
cumin dash
black pepper to tasteDirections

Brown steak in butter in skillet.

Add onion and green pepper.

Sprinkle with flour; mix well.

Combine garlic, tomatoes, cumin and pepper in bowl; mash well.

Add to beef.

Simmer for 20 minutes, adding water if needed for desired consistency.

Chef McGrath’s Green Chile Pork
Jack Ingram knows how to cook—onstage and in the kitchen
Ingredients
2 tbsp. corn oil (the chef prefers not to cook with olive oil)
2 pounds coarsely cut boneless country-style pork ribs
Kosher salt and cracked black pepper to taste
2 cups diced yellow onion
¼ cup minced jalapeño chiles
1 cup seeded, stemmed and minced dried New Mexico green chiles
¼ cup minced garlic
2 cups roasted, peeled and puréed poblano chiles
1 cup grated pepper jack cheese
24 (6-inch) flour tortillas
¼ pound butterPreparation
Over a fire, in a cast-iron pot or Dutch oven, heat the corn oil. Season the pork with salt and pepper. When the oil is hot, add the pork, onions, jalapeños, New Mexico dried chiles and garlic. Cook over the fire until the pork is tender, approximately 1 ½ hours. Add the poblano chile purée (for added flavor, add some chicken stock to the purée) and simmer for 45 minutes to 1 hour. Season to taste with salt and pepper. Serve the green chile pork from a kettle or crock, topped with the grated cheese. Lightly brown the cheese if possible.
Grill the tortillas and brush with the butter. Spoon the green chile pork into the tortillas and roll them up.Serves 12

Fried Green Tomato BLT
Mel Tillis helps create a specialty dish served up every day at the Country Music Hall of Fame.
Ingredients
3-4 medium green tomatoes, cleaned and sliced into ½-inch-thick rounds
1 cup mayonnaise
1 tsp. roughly chopped fresh parsley
1 tsp. roughly chopped fresh thyme
1 tsp. minced green onion
All-purpose flour
1-2 cups buttermilk
Cornmeal
8 slices whole wheat (or any style) bread
4-8 slices mozzarella cheese
Leaf lettuce
12 slices of “cooked-to-taste” applewood-smoked baconPreparation
Combine mayonnaise, parsley, thyme and onion in blender and set aside.
Lightly salt and pepper sliced green tomatoes to taste.
Dredge tomatoes in flour (both sides), then dip in buttermilk.
Coat tomatoes with cornmeal.
Fry tomatoes in canola oil at 350° until golden brown.
Depending on preference, toast the whole wheat slices prior to sandwich assembly or butter and pan-fry both sides of assembled sandwich afterwards.
Spread herbed mayonnaise to taste on inside slices of bread.
Layer 1-2 slices of mozzarella, leaf lettuce, bacon and fried green tomato.Makes 4 sandwiches:)

Elvis' Favorite Sweet Potato Casserole
SERVES 6
Ingredients
4 medium sweet potatoes, peeled and cooked until tender
4 tablespoons unsalted butter, softened
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla
2 eggs, beaten
12 ounces evaporated milk
1/2 cup pecan, chopped
1-2 cup moni marshmallowsDirections
1
cook sweet potatoes, peel and mash.

In a large mixing bowl, blend sweet potatoes, brown sugar, cinnamon, vanilla and a pinch of salt.

Stir in eggs and milk.

Pour into a square baking dish.

Bake at 375°F for 35 minutes.

Remove from oven.
7
Top with pecans and marshmallows and return to oven for 5 minutes or until marshmallows are puffed and browned.

Ingredients
1 regular pie crust
1 cup creamy peanut butter
3 tbsp. whole milk
One 8-oz. package cream cheese
One 12-oz. container Cool Whip (halved)
1 cup powdered sugarPreparation
Bake pie crust as directed.
Mix peanut butter, milk, cream cheese, powdered sugar and half of Cool Whip.
Pour mixture into pre-baked pie crust.Top with remaining Cool Whip.

Aunt Martha’s Peanut Butter Pie

Ingredients
1 regular pie crust
1 cup creamy peanut butter
3 tbsp. whole milk
One 8-oz. package cream cheese
One 12-oz. container Cool Whip (halved)
1 cup powdered sugarPreparation
Bake pie crust as directed.
Mix peanut butter, milk, cream cheese, powdered sugar and half of Cool Whip.
Pour mixture into pre-baked pie crust.Top with remaining Cool Whip.

Johnny Cash’s Old Iron Pot Family-Style Chili
Johnny Cash’s sister Joanne presents his family-style chili recipe.
Ingredients
5 pounds sirloin steak, chopped
Shortening
3 pkgs. chili seasoning mix
3–4 15-oz. cans red kidney beans
3–4 16-oz. cans whole tomatoes
All
seasoning to taste
Cumin
Thyme
Sage leaves
Garlic powder
Onion powder
Salt to taste
Chopped onions
Chili peppers
2 tbsp. sugar
Chili powder
Chili con carne seasoning
1 can tomato pastePreparation
Brown the meat with a little shortening until medium. Add chili seasoning and cook 5 minutes. Add beans, tomatoes, spices to taste, onions, chili peppers to taste, sugar, chili powder and/or chili con carne seasoning to taste. (If chili is too hot, add 1 to 2 cans tomatoes.) Add tomato paste.
If chili seems too thick, add water. Simmer on low for 20 minutes.Serves 12
